Cinco De Mayo Keto Recipes

Cinco De Mayo here and you’re worried about busting your diet? Not with Keto Kueen. I have a full menu of keto friendly recipes even your most carnivorous margarita chugging friends will enjoy!

Lets start with the Margaritas! (of course)

Those store bought mixes are full of carbs and sugar and honestly- tase artificial. I can’t stand them, so I created a perfect sweet-sour mix that is also refreshing!

Keto Margaritas-


Ingredients: (Makes 1 pitcher)

  • Ice
  • 10 limes
  • 1 can zero sugar sparkling water (plain or orange flavored) – any brand
  • 1 bottle of your favorite Tequila
  • Swerve sugar replacement

Fill pitcher with ice, squeeze juice of 10 limes. Pour desired amount of Tequila, I did about 1/3 of the bottle above. Top off with sparking water and add 1 tsp Swerve (you can add more if you like but I would start with 1 tsp).

Now- the question is, on the rock or frozen??? If you want frozen, pour into blender and serve!


Now, let’s get snacking!



This is soooo refreshing and tasty- I crave it!


  • 2 12-16 ounce packaged (low carb) imitation crab meat
  • 3 cucumbers
  • 1 small red onion
  • 1 bunch cilantro
  • 1 16 ounce container of fat free sour cream
  • 3-4 tomatoes
  • 1 jalepeno
  • Juice of 3 limes
  • Salt & Pepper to taste

Finely chop the cucumber, onion, cilantro and tomatoes.


Roughly chop the crab meat, mix all ingredients in a bowl and season with salt and pepper. Refrigerate for 45 min, serve with fresh cut veggies and radish chips. Enjoy!

Pork Carnitas-

A staple of cinco de mayo is taco’s, right? Well you don’t have to give that up just cause your Keto. Here is a Keto friendly carnitas recipe that is so versatile after trying it you will want to put it in everything!


  • 3-4 lb pork shoulder (but)
  • 1 large yellow onion
  • 2 dehydrated New Mexico chilies (rehydrated in a bowl of 2 cups of water in the microwave for 3 minutes) -save the water!
  • 2 Tbsp Cumin
  • 2 Tbsp minced garlic
  • 1 cans chicken, veggie or beef broth


Instant pot version-

Cube onion and place in the bottom, cover with broth, chillies, garlic, cumin and leftover water from rehydrating chillies. Then cube pork into one inch by one inch cubes and place on top of mixture.


Cook on high pressure for 35 minutes, and then let slow release for 10 minutes.

Drain all liquid and remove chillies. Shred and enjoy!

Slow cooker version-

Cube onion and place in the bottom, sauté on high for 10-15 minutes, cover with broth, chillies, garlic, cumin and leftover water from rehydrating chillies. Then cube pork into one inch by one inch cubes and place on top of mixture. Cook on low for 6-8 hours or High for 4-6 hours. (Slow is recommended). Drain all liquid and remove chillies. Shred and enjoy!

Carnita tacos- Keto style

You can’t have tacos without some sort of shell. I have tried many different things, I tried making them out of cauliflower- wasn’t that great and it was messy. I tried lettuce- didn’t hold up well to a lot of ingredients. I even tried making my own out of almond flour- they were gritty. So I now ONLY use … wait for it…. sliced Jicama!!!! (insert round of applause here). The slices hold up great, don’t add much of their own flavor and give a satisfying crunch. I recommend using a mandolin if you have one, otherwise just a sharp knife and a steady hand. They are inexpensive and can get about 8 slices out of an average size jicama.

Thee best homemade salsa-


  • One small white or yellow onion
  • 10 vine ripened tomoatoes
  • 2 cloves garlic
  • 2-4 jalapeños (according to how spicy you want it)
  • 1 bunch cilantro
  • Salt & Pepper to taste


In large pot place tomatoes, onion (diced), garlic and jalapeños’ (tops cut off). Fill with water to cover the top of the veggies and boil for about an hour. Drain all water and place in food processor. Add cilantro, salt and pepper and blend to desired consistency. Refrigerate for at least an hour and serve. – You are welcome, your friends and family will ask you to make this at every family function from now until the end of time!

Keto Spanish rice-

I am obsessed with good Spanish rice, but on Keto its not an option. SO I created Spanish cauliflower rice that holds up to the original.



  • 2 12 ounce package of frozen cauliflower rice
  • 1/2 yellow onion
  • 4 ounce can of tomato sauce
  • 2 tbsp oil
  • Salt & Pepper to taste

Saute onions in oil until browned.


Add cauliflower, and sauce for 3 minutes high heat. Then turn down and add tomato sauce, mix well and sauce for 5 minutes.


Salt and pepper to tase, and serve!
